The blue IS the antioxidant
Nothing is added to make it blue. The colour comes from anthocyanins — specifically ternatins — the same family of plant pigments that make blueberries and red cabbage what they are. Colour and antioxidant are the same molecule.
Zero caffeine, honestly zero
Not decaffeinated — it never had any. Butterfly pea is not a tea leaf, it is a flower. You can drink a full cup at 10pm and it will not touch your sleep.
Nothing but the flower
No colourants, no flavourings, no preservatives, no fillers, no “natural identical” anything. Open the jar and you see whole dried flowers, because that is all that is in it.

Anthocyanins are a natural pH indicator. Add lemon and the acid shifts the pigment from deep blue to violet to pink in front of you. It is not a trick, it is a titration you can drink.

Why it does that
Where the blue comes from
Ternatins are polyacylated anthocyanins. Their structure is stable enough to survive hot water, which is why the brew stays vividly blue instead of fading brown like most flower infusions.
Why lemon turns it purple
Anthocyanin colour depends on pH. Around neutral it reads blue; add acid and the molecule changes form and reflects violet, then pink. Add a pinch of baking soda and it walks back toward green.
Why we grow it hydroponically
No soil means no soil-borne contamination and no field spraying — the flower arrives clean, so nothing has to be washed out of it later.
